The biggest thing I look for in portfolios is your thought process, why you made specific choices, what data you we’re looking at and that you can understand the business processes, work with and negotiate with stakeholders and a cross functional team
You can definitely show your thought process and why you made specific choices. If you partnered with any boot camp engineers on a project you can talk about how you worked with them
Real-world case studies that aren’t food trucks are a good start…
Following! But also: some feedback I’ve gotten is to make a UX case study for anything you’ve done to solve a REAL PROBLEM for a REAL BUSINESS/PERSON. Hiring managers want to see how you think, recruiters and businesses with non-UX background want to see how you work and add value

Folllowint as well!
I like to see the failed design explorations (curated, of course), with a reflection on why it didn’t work. Was it a lack of understanding of the problem, user, etc? Did you test it and get feedback? How did you go from the original idea to the final design?
Great storytelling!
Process. Research. Ability to talk through decisions and weigh options. Passion for the user. Technical variety.. I LOVE when a designer lets down their 'interview shield' enough to talk through new ideas off the cuff during an exercise review. but also - put some flashy brands in there or sexy imagery. Half the people you will talk to have no idea about design principles, but will drool over a well place stock image. it's likes execs and pie charts.
