When you're applying for freelance or gigs through sites like Upwork, do you send potential clients thank you follow up messages? I know this is proper etiquette after interviewing for traditional jobs, but do freelance clients expect the same behavior?

I have a promising interview at a relatively large law firm in my area (+100 attorneys) next week. The position is for a transactional role in their real estate practice group, and they are seeking someone with at least 2 YOE. I have a bit over 7 YOE with a strong real estate/commercial lit. background. Over the past two years in my current position, I've been doing a lot more transactional work. The split is around 50% transactional and 50% lit.

How do you get experience when no one will hire you? I wouldn’t mind hanging a shingle but I feel it’d be irresponsible to do so with no experience. Unlike all of my classmates, I never landed an internship/externship in law school - had only one interview. I was a PT law student, came from a CS background, and worked in IT throughout law school. I passed the bar exam on my first try (Oct 2020) and have only had a couple interviews out of the hundreds of applications I sent out. Any suggestions?
