One of my biggest home search pet peeves!! We rebuilt our kitchen a few years ago and adding an exterior exhaust was in the top 5 must haves.
The other frustration in my area is almost universal use of electric stove tops- a serious cook needs a gas cooktop!
We had the exterior exhaust added when we built our house. It’s considered an upgrade even though I paid for a ‘gourmet’ kitchen. I agree it should be included. But its not that hard to add later. A few of my friends have done it

Have you added ‘chefs kitchen’ to your home search criteria? Maybe homes have them, just not in your price range. Might just have to be something that you accept will be something that you budget as an immediate renovation

You could easily add it if the range is on an external wall, or even perpendicular to one. If perpendicular, you add a soffit above the cabinet run and vent it out. Not hard or expensive or messy. If it’s on a fully interior wall, then you are in for more complex fixes, but depending on joist direction and what’s in the ceiling between the stove and the exterior, it’s def doable (less easy to determine these things before you buy, tho).
They’re standard in European… I too find it strange that American homes have a microwave mini fan that barely works over their range instead of a proper ventilation system 😬. I guess these microwave fans are cheaper? I hate mine & the fire alarm goes off every time we cook impossible burgers or sausages.
You can always add one. A custom island vent will cost probably $2-4k for parts. Wall vents will be cheaper because they have one less side to worry about. Lots of premade vents as well. Installation is going to vary by region
