Though hardly international, i think Montreal is a sleeper, especially for a short trip. Mex City, Oaxaca and Queretero are also bangers. Mexico City is steeped in history, a good neighborhood to stay in is La Roma, Oaxaca is stunning and some would argue the food capital of Mexico it is also on the northern edge of the coffee and chocolate (cacao’) belt, so you may be able to do a day trip to the mountains and your a farm/production facility, Queretero kind of reminds me of Spain.
3-4 days is not much so I would say Vancouver, Mexico City, or some island
But strongly prefer non stop. Some ideas we have discussed: Paris, Panama, Istanbul, Vienna, Hong Kong. Any other ideas? Looking for some adventure, fancy hotel, good food

What about Portugal? I went there for a 4-5 day trip and was able to do a little bit of Lisbon and then algarve and the beach too
Youre willing to fly to Asia but not willing to connect? I'd say go to Lisbon or Montreal. The connection isn't awful though Heathrow
Yes. Connecting is annoying. I actually prefer a 12 hr flight to Asia over the 8 hour flight to Europe. 12 hr. You can get settled, watch a movie, get a full nights sleep, have breakfast.. and you are there.
We are open. One thing we like about panama is that you can get both. But are somewhat limited by our time of year and non stop requirement. If we could pick anywhere, we would probably like something on the order of Greek islands (that’s where we did our honeymoon) or Cartagena. But those aren’t practical due to flight times/connections for. 3-4 day trip
How about Croatia or Denmark ?

I was just in langkawi. I’m sure that’s not direct either but awesome place.
You can get to all 6 inhabited continents nonstop from ORD (the only place in the Americas this is possible on commercial flights btw).
United has some great specials from ORD to Australia and SE Asia at the moment, though most would require a layover on the west coast. When I go to Asia from ORD (I second the Singapore suggestion above btw), I often get an all-day layover in SFO so I can hang out there for a day.
Iceland is awesome, though you can’t see the Northern Lights in May. Montreal is also solid and a more practical 3-4 day trip.
