Eat the street food. It is worth it. There are some amazing tacos in condesa at night near parque españa.
Go to quintonil and Pujol.
Go to the castle in Chapultapec. If you like museums, the museo soumaya and the anthropology museum are both stunning.
Frida Kahlo’s house. Natural History Museum. The government plaza/historical district. And if you can make it to Teotihuacan I HIGHLY recommend this. I’ve been three times and it’s truly breathtaking from the top of the pyramids. 
If you’re staying at a hotel the concierge may be able to hook you up with a tour guide for $70-100/day. Totally worth the ones I’ve used, especially if they provide the transportation.
Food - do NOT eat the street food unless you want Dysentery/Monazuma’s Revenge. I don’t care how amazing it looks or smells lol

Eating street food is fine, had no issues whatsoever. Loved the Mexican street corn. Take a boat ride in xochimilco. This was my fav part of the trip. Just took an Uber out there and back and we payed a mariachi band to sing happy birthday. Tip - stop and pick up beers and drinks for the boat ride by the nearby vendors. They do have floating vendors that will come up to the boat and sell food as well.
Califa is a chain of street style tacos and is 🔥. Polanco is a nice area to stay.
STAY - Roma Norte or Condesa
EAT - Pujol, Contramar, Panaderia Rosetta, Taqueria Orinoco, Los Cocuyos, Tacos Alvaro Obregon
DRINK - Licoreria Limantour, bar hop on Avenida Alvaro Obregon
SEE - not in CDMX but day trip to Teotihuacan, Frida Kahlo Musuem, Palacio Nacional

+1 for Pujol, it is worth it and not even that expensive
Mexico City Street tacos are the most incredible street food I’ve had anywhere in the world
We stayed in condesa, Terraza and Pata Negra were my favorite bars (20s/30s crowd)
Walk around plaza de reforma
If you want something edgier/riskier- Tepito is so much fun, grab a drink and walk around the market (leave valuables at home)
Pujol, Limosneros, Rosetta, Limantour. Mexico City is the only other city I’d live in in NA...
Oh yeah Pujol is 🔥 too if you can get resos as others have said.

Has anyone been recently (during covid)? Fully vaccinated and thinking Mexico City might be an easy first trip as long as things are open and doing ok

Yep we went in October. They are pretty strict about masks and bars were pretty dead but everything else was normal.
El Turix has the best panucho I’ve ever eaten. Incredible stuff, always go back several times when I’m there
