I’d call one of them when you open and let them know you’re traveling, so they can hold off on mailing you a debit card and other bank info until you return.
FYI for almost all banks you can open online, but they will still mail you things.

Ally Bank is great, and fully online!
I like them because they’ve got pretty generous interest rates, reimburse for all ATM fees (up to $15 a month I think? Idk I never use cash LOL) and they’ve got a great ‘buckets’ feature in their savings account that allows you to divide your money into different savings buckets such as vacations, wedding, down payment, etc, while staying in the same savings account.
Nice! I rarely use the ATM reimbursement, since the only time I ever use cash is for tips @ the nail salon (LOL sad but true), so the lower amount with Ally doesn’t bother me, but that’s great to know.

Pretty much any bank will let you sign up fully online. Look for banks offering deals for signing up (you can usually get a few hundred dollars). Not sure if they're offering a deal right now, but Capital One 360 checking is surprisingly good - there is no monthly fee (most banks have requirements like a minimum balance in order to avoid this) and there is interest (albeit much lower than what you'd get in a high yield savings account, but it's still rare in checking). Chase and Citi are also good (and I believe they offer deals more often than Capital One), but just make sure you'll be able to meet the requirements to not pay a monthly fee.
