Best flats for work?

Here's how I would answer this question in your shoes, "Yeah, the biggest thing missing from my project-based consulting experience is having the opportunity to drive user value in a data-driven way—to see whether the hypotheses baked into the initial product decisions are validated and to learn, adapt, and iterate against well-defined metrics strongly aligned with user value. This is why I'm passionate about moving into product. So I haven't had the opportunity to do this first hand, but let me walk you through the last software project I was on and how I wanted to measure success if given the opportunity to properly PM it. First, let me start with the goal of this particular project—here's the user problem we were trying to solve... Here are the metrics I would choose to measure whether we were successful at moving the needle on this user problem and why... When we decided to build the product in XYZ way, unspoken was the hypothesis that it would move these metrics in this way for this reason. Had we had the ability to measure success, I would have expected ABC outcome based on..."

For example if I was asked “Tell me about a time when you had to analyze the customer funnel/path to purchase” I’ve never been in a position where I have access to supporting data to analyze where a customer exited/fell out of the path. How would I go about this if I haven’t worked with increasing customer adoption?
Well what do you do now? What is the closest experience you can think of? Have you ever done a benchmark analysis to measure engagement before your work so that the company has something to compare against when you finish? Does your work ever get released incrementally or always all at once?

Be upfront about not having done this. Study sql, other mechanisms for data collection, etc. and do your own mini projects. There are a lot of courses available with built in projects available online. Based on that, position this to the interviewer about the things you have learnt and are open to learning more on the job.
