There are no real options for "all inclusive" in PR. That court yard is at a great location, I got married there. It's close to the airport and has the nicest beach of that metro area. Lots of options to eat around there and local. Try to rent a car and drive east, you can spend a day in El Yunque and explore the kiosks in Luquillo. For zip lining I think Toro Verde is the best option. I'm not a big snorkeling person, so I can't help there. I do know that Culebra and Vieques are amazing for best beaches of PR, so that may be a 1 or 2 day trip you may want to do.
Just go big and stay at the Ritz Carlton in Dorado Beach. Sickest hotel I've ever been to.
Go for a swim in the bioluminescent bay!
A3 nailed it! The ziplines at Toro Verde are one of the coolest things I've ever done on any vacation. The rain forest at El Yunque make for a great day of hiking and swimming in the waterfalls. And great snorkeling just about everywhere.
I think the bioluminescent bays are closed to tourists since there was over tourism and they started dying a few years ago. I've stayed at La Concha, if you can score an upgrade it's amazing. Stay within tourist controlled areas.
Skip the all inclusive and explore food and drink options in the city. I stay at the Courtyard Marriott on the beach. Really nice and a good location.
SPG doesn't do all inclusive with points, only in one place in Panama, and even then it's a 150+ resort charge.

PR is a pretty reasonably priced place to eat and drink. You might actually do better on cost and have more fun exploring local places.
