I think it’s easier to get pay raises in the beginning when you’re starting out then things kind of plateau off until you switch firms and get a higher pay

Yes, if you’re in consulting, high finance, etc they have quicker promotion cycles
Moving jobs regularly. Also, if your salary is 250k and you get a 5% cola raise, that’s still a large amount
I don’t think so. The examples you shared in addition to other posts I’ve seen, all follow the same format:
Year: Salary $ + Job Title
I’m not saying those advances aren’t possible, because they are. However, it’s a little suspect when they all start out in the service industry earning $3-$12/hr then all get promoted to ELM, pulling in $150-$200k/yr. in a few short years. One post claims a 620.83% increase in salary over 12 years or a 51% pay raise per year, every year.
I did a fair amount of (unwilling) job hopping in my early career. It resulted in signifiant jumps. Once I hit 2018 - I made a 30k jump and from there my comp has grown thanks to stock/bonus/high performance ranking jumps + promotions (in recent years)
If you’re switching positions you should get a 20% bump at a minimum. If it’s for a different company, sky is the limit!
