Preferably with another offer in hand, just tell them you've found a new opportunity and are willing to help transition responsibilities until you leave
Just make sure you’ve got your responsibilities documented so they have things to reference after you leave. That goes a long way.
Sometimes it's OK to burn a bridge if it takes you to nowhere you plan on going.

I think sincerity will go a long way. It sounds like it shouldn’t be a surprise to them, given that I’ve asked for and been denied what you need to stay. Be firm in your resolve to move on because they probably will hit you with a counter offer. And be prepared to cut short the conversation and perhaps your remaining time there if they start getting ugly. You’ve done the right thing if you’ve been clear all along that your current workload is too much and you see no opportunity for growth.
