What do you mean by availability differences? Are you booking through Chase's travel portal or something? There aren't any differences if you're booking via the airline.
Personally, I use CSR for all non-airfare travel expenses, and AMEX Plat for airfare. Plat alone is a godsend for frequent business travellers -- lounge access, status with rental car agencies and hotels, Uber credits, and the concierge desk if you need to make weird or last minute reservations.
CSR helps me max out my Star Alliance points on United (fly United + book Marriott properties that credit 2x miles per dollar to United + 3x Chase points on hotel spend that I later transfer to United), and I use my AMEX points to transfer to ANA for international travel (while taking advantage of my Star Alliance elite status). The two cards have great synergy if you're a Star Alliance flyer imo.

I meant for booking personal travel through the chase travel portal vs booking through Amex platinum.
I was looking at that part too. It looks like with CAR you transfer to united 3pts per dollar but can transfer to ANA 5p/$ through Amex.
I’ve been just booking normal tickets through the chase travel portal then using GPUs, so it seems like even that would be better on Amex platinum..
