I don't think retaking the GMAT will help you much, and I think you should have a fairly decent chance. I'd go for it. Make sure your app is really tight though.
For consulting, I think you should try to get a referral and apply around now, you’d get to avoid the loss of compensation and tuition for that 1 year. Top companies seem to have quite the openings at the moment. For VC/IB you’ll have to go to school. Regardless, an mba is a great way to take a year off of work if you can afford it, just be weary that a euro mba is going steer you strongly to European opportunities mostly.
Is it even possible to actually go in as an experienced hire? Feel like the experience is v different vs coming out from school

Some euro schools like Cambridge and oxford don’t even post gpa. Have a good story and the gmat is all you need
Why only Euro 1 yr programs? Are you living in Europe currently?
1) because I don’t want to take two years off from working (financial reasons) and 2) because I want to get out of the US and try another country
