Oregon coast for sure, so many amazing sights
What did you do while you were in Portland?
Tillamook factory, haystack rock, seaside, cannon beach, astoria column, Long Beach, ocean shores, and take the ferry into Seattle from across the sound
If you can, try to stop off in Bend, Oregon. Great beer and food! There’s an actual reason why celebs are buying up all the land there.

Native OR here: if you stay on I-5 from San Fran north: Redwoods, Grants Pass Rogue River jet boats, Crater Lake, Eugene, Willamette Valley wines, Portland {beer, coffee, Multnomah falls, bridges, kayak on the Willamette downtown-"Kayak Portland" is company on the banks, voodoo donuts, powell's books}. Seattle is a city I'm not as familar with. But there's your southern leg. Coastal route above in comments is also nice! Warning that Bend is a bit out of the way, but worth it!
