Usually Air France has best points deals to Europe. Look for flights on Air France and then transfer from Chase to flying blue. If there is a shortfall, you can buy points (from Air france) or have people book for you ( I have around a million points if you need).
I just booked to Madrid on Iberia/British air. Paid $1100 + 77k points for business class for 2 people

Iberia has remarkably low rates into Madrid. Business class as low as 34k one way, and somewhat decent availability
Use an award search engine for the dates you want to travel. There are several. Then transfer your UR rewards to that travel partner and book with them directly!
Also consider looking at booking a revenue ticket through the chase portal which you directly apply points to assuming you have an ink/sapphire
Update for other noobs:
We booked our tickets that night. Iberia offered the best value, they allowed points + cash. Since our trip was in less than a month and during peak season, we ended up paying 85k points + $1.7k. The cash alternative was $3k+, not the exact same flights though, so it's don't really have an apples to apples comparison. The points were transferred within a minute from Chase to Iberia.
British Airways was more expensive in both points and cash for the same flight. Air France was also more expensive than Iberia but cheaper than BA. On the other hand, United only accept miles and they were asking 350k points. I didn't try any other Chase travel partner.
One thing I noticed, the "book with points" section of pretty much every airline is designed with the most amount of friction possible. Random errors, you can't see the points price in calender view, you have to manually iterate, limited options, etc.
Is there a website where you can see the points cost in calendar view? I have heard of it pointme but I don't know if there's another option.
