Don’t do it, the job market is really bad right now. 200+ applications per opening. I was looking around myself just to see what is out there and it’s very competitive. If you have a nice nest egg that could get you through the next 6-7 months while you look that could work but having 2 kids with no job seems more stressful than grinding current job while looking for a new one. I also just had my 2nd in September so I feel the exhaustion with you. Just keep grinding!

Stay until the baby is born and you can take parental leave.
Make a decision on whether to return during the parental leave.

My life and my career had to change when my wife and I had our 2nd child. A normal 9-5 job is Monday - Friday, which means you have to sacrifice a work day to bring your kids to the doctors. I used my 15 years of experience in the labor sector to open my own business doing garage door repair and solar sales. This allowed me the flexibility I needed to be a present dad, My advice is to Look into sales or consulting opportunities, build on them while you have a steady income, rely on them when it's time to be a father
Good luck getting an interview in today's job market! Don't quit a full time job with benefits, regardless of stress, unless you know someone in your network who will create a job for you.
Some consulting firms will give you time for job hunting if it is mutually agreed it is time to move on. I'd really step back and think about what you want to move towards instead of what you want to run from. You have durable skills. How do you want to add value? What do you see as your purpose? What kind of life do you want with your family?
