Splurge and money saving doesn’t coexist. Favorite airlines to china are ANA, Cathay pacific or Korean airline, all have one stop in way to china, but worth it.
Cathay Pacific is my personal fav airline in economy(never travelled anything better). Not sure how it translates to business but I’m sure they do a good job.

I’ve flown Delta One a couple of times by booking Delta Comfort Plus and then requesting for an upgrade the 1-2 days before the trip (pre-covid did a one-way to Tokyo from Atlanta on Delta One for around $1500). However, it’s a risk as you have to gamble on whether or not first class seats will be left over. Also, sometimes Delta will say an upgrade isn’t possible but it always is - just keep contacting them.
Although tbh Delta One isn’t that nice of a first class compared to other airlines out there.
Plenty of fantastic airlines out that way. You could get a world class expetience on JAL, ANA, Singapore, Korean, Cathay Pacific, EVA, or China Airlines* at least. If Korean is flying an A380 to LAX, consider that. Outside of Emirates, double decker passenger planes are almost completely dead.
Beyond that, I would have to look at schedule, price, etc. more than anything to make a specific choice.
*China Airlines flies from LAX to Taipei; Air China (different airline) flies nonstop to mainland China. Since you're going for a splurge, try to avoid Air China. Their service is hit or miss.

I think you’ll have very limited if any choice. Pretty sure it’s still 1 city pair = 1 airline or something similar at this point
Look at google images for the airline/plane model you want to fly before booking. Some business class isn’t worth it (like coach but with a little more leg space). You want seats that lie down, separate menu, individual “pods” where every seat is separate, etc.
Yes. Ive flown Cathay, ANA and Eva Air business class. Eva Air is amazing, they even give you decent pajamas for u to keep lol. I still wear them. Ana is max privacy and great food menu. All good.
