An FP&A role paying less than 60k?? You can do much better. It can't hurt to finish out the interview process and negotiate if/when you get an offer... but since you like your current role, I'd probably just keep recruiting. You should be able to make more in FP&A, not less. Your salary is already very low to begin with.
Don’t leave the job you like after 1 month. Rule of thumb is to stay at least a year in a job unless you hate the job.
Salary aside, consider what you risk if you leave your current job for another job and it is not a good fit. You would be in the position of having left two jobs after brief stints and have an even lower current salary to negotiate with. That would be a significant handicap if a good FP&A opportunity comes up.
