Create an Air Canada Aeroplan account. Search for the flight you’re targeting on the air Canada website. You will likely find the flight or very similar at a MUCH lower points cost. You’d then transfer your capital one points to air Canada and book.
If you want Polaris, points use & specific days-you might need flexibility on airport. A short flight to EWR, IAH etc could yield more availability if all other things are covered

You can't use Skymiles for United flights.
Capital One doesn't allow transfers to United MileagePlus. Your only option would be to transfer Venture X rewards to one of the Star Alliance airlines such as Singapore or Air Canada and hope they have Polaris availability for you to book
My apologies, my points are actually with MileagePlus and not SkyMiles. Do you have any experience transferring CC puts to an Alliance Partner, then spending it on another Alliance Partner (eg Venture X to Singapore to United)?
