Hiring managers: if you met a candidate that you felt was the perfect fit, would you cut steps in your interview process to hire them? Or would you still go through all the normal steps knowing that you want to make an offer anyway?

Basically, I’ve moved to industry and I’m lucky in that I have full control over my hiring process. I’ve met someone that’s a perfect fit so am considering moving straight to offer, but am concerned I might miss something by doing so.
