Why can’t you just do a search yourself?

I've tried a bunch of ways using the airline I normally fly but haven't had any luck. Was hoping someone knew of a route / airline where that amount of points would be sufficient - happy to search myself but was looking for some insight

80k for two tickets will be really hard - you would need a transfer bonus + a promo. Even then, not sure if you could.
I’m not sure you’ll have much luck finding somebody with the exact same need who did the exact same search for the exact same day. Try the Flyertalk forums.

BA and virgin (high taxes/fees though), Iberia, air Canada, Air France are you best bets. Just keep plugging in random cities.

And I mean transferring points to those airlines to redeem for award flights
Options to look into (only Iberia is under 80 total, but the others are under 100 for two if you can get more Amex points):
Iberian is under 40k each way if you can availability from Barcelona or Madrid.
Aer Lingus (using Avios) from Dublin.
Delta (using Virgin Atlantic miles), just avoid connections or leaving from the UK.
This also was a super easy google search to CM1’s point. Like under 5 minutes.
Saver availability is hard to find, particularly if you have a rigid dates/locations. It’s also not static and is worth monitoring.
80k each or total?
If you book through ANA (star alliance), you can get 60-75k roundtrip biz each

Look at transferring to Aeroplan as well, not sure if they still are an easy transfer, but there used to be a lot of business class availability to Europe a few years ago
