Any time you can have them create something like your example, you’ve got yourself a winner. My team and I found some cool posters on Teachers Pay Teachers for Hispanic Heritage Month, Black History Month, and Women’s History Month. Each student is assigned a famous person that fits the category, they research that person with our LLC’s databases, and then they have to create an informational poster about their person.
It’s also REALLY easy to create a website with Google Sites. We do something at the end of the year with that and the kids LOVE it. (That project is not for writing informational text, but you could easily use Google Sites for such an endeavor.)
Update, I did the google site suggestion and my kids and the parents loved it! They made their own “online magazine” and it was a hit. Thank you so much for the suggestion! https://sites.google.com/bloomfield.k12.nj.us/thelife/home?authuser=0
