Contact your state's bar association. Ours has programs, CLEs, and a mentor program for exactly this. I'd also just network with friends or colleagues who have done it before if you have those.
I took three solo attorneys to lunch before starting my own firm. During those three lunch meetings, I took notes like crazy and felt comfortable starting my practice with the knowledge I had gained.
Your state bars website should have a very detailed page and potentially a guide book/manual on the regulations and operation of IOLTA accounts. Hiring a well-experienced PI bookkeeper is greatly recommended. If you are doing it all alone, QuickBooks online is user friendly. Get a PI bookkeeper to show you how to set up client ledgers, etc. or outsource this work, check around with other firms for recommendations.
Getting enough clients to stay afloat is probably going to come down to you courting some chiropractors and other types of pi doctors. Developing relationships so they refer their patients to you is going to go a long way.
