Pretty sure the SQL that is assessed in these technical interviews does not include the nuances peculiar to different SQL systems
In my experience if they want a particular dialect of SQL to be used, the documentation will be available for use
Yeah SQL is more theory in interviews rather than syntax. Examples would be, what tests do you run when you do X to ensure the data is accurate, what kind of join would you use in Y scenario, you have one data set with these attributes and you want to end up with X what do you need to get there?

In a recent job interview I was asked to write custom SQL in a blank editor. Without reference to documentation.
So like the others said. It's not SQL DB Admin skills that's needed. But fluency in writing

@PwC1 Theory questions are asked only in Deloitte and PwC type of companies.
@OP If you aim to get a job in the industry, they will give you sample scenario, make you design the tables and then write SQL queries to answer few questions. For some roles, they just give you the tables and ask you SQL queries. They want to see how you think and get to the answer. They don't care which SQL you are using, they just focus on the base syntax. Just pick any one and follow the same.

FB Data Engineer- Analytics/Data Analyst role will ask you. Even at Amazon, I have heard that they have asked to draw the ERD diagram on a whiteboard. Walmart might also ask you to do it. If you are only focused on Data Analyst roles, then don't spend much time on ERD diagrams. Just practice easy and medium questions on Leetcode and you should be fine.
You can do some visualisation practice using either Tableau or Powerbi. If you do the free tableau elearn with the 14 day trial to get some experience on data visualisation options.
