Exceljet is very helpful. It walks you through step by step on new functions and gives you sample data to play around with
Use GenAI/chatgpt to write formulas and answer questions.
There's a subreddit on Reddit where people talk about specific Excel problems. You can learn a lot by lurking there, essentially picking up pointers from other people's questions and answers.
Try and recreate your paycheck statement in excel. That will show you how tough do math and organize your information.

Couple thoughts come to mind. First Coursera offers several, some free, some cost. The other option is open up help f1 and start looking at the topics, those you're familiar with skip and those your not look into the help content.
The only thing I would suggest is paying attention to the version your using, not all are the same. Make sure your learning is related to your version.
In my opinion I would advise anyone wanting to expand there Excel knowledge to understand that a large % of what is done in Excel should not be. I would recommend exploring Microsoft Access, or Database fundamentals.
