Well of course you won't be able to follow them all, but it generally shows goodwill and respect over the alternative. You don't see atheists going into people's houses and chatting/eating/ignoring the hosts while they say grace, yet does that make them pretentious for following the cultural norm?
It is no more pretentious than calling someone "Mr. Smith" instead of just "Smith". It is illustrative of your awareness of another culture and their norms.
It's respectful, not pretentious. OP have you travelled to other countries a lot? The more you do that, the more you'll get this.
What, it makes you feel like you're pretending to understand more about their culture than you actually do? You could always try -chan if you're worried about appearing more knowledgeable than you actually are... 👹

I believe it's pretentious to think that you are following cultural norms by using a word.
But yes, using -san by itself is no "oh look at me I'm being so culturally sensitive" card
