I'm not sure how you managed to get to Sr Product Manager without experience delivering products?
You will be prioritizing with half your understanding tied behind your back if you didn't have a solid working knowledge of delivery and how to make tradeoffs in solution design and engineering.
But if you hate making a product idea come to life, and prefer to stick to Slideware, go for a strategy role. You will continue to be expected to stay close to driver of you claim to be a PO or PM.

I feel like I should just quit for mine and their sake because my manager has already criticized my ability to do the role of project delivery when I have never done that because i’ve only been a true product manager. I feel very misled and like my time has truly been wasted because they don’t know what a PM is supposed to do

I’m sorry this is happening to you, it just feels eerily similar to a fortune 15 I’ve experience working at. In which, almost all team have no idea what real tech PM vs PO is.
I would say, ride it out and keep searching for a gig unfortunately.
It is good that you are aware of the gaps early on.
Do not quit yet.
Keep looking for another job in the interim.
Once you get a good offer, make the move. Current market for Product managers do not seem to be bright.

there were also things they asked me to do after I accepted the job. I live on the west coast and after I accepted the offer they asked me to work east coast hours so i’m literally working at 6am every day. i’m also only supposed to work 40hrs per week because i’m contract and they’ll keep me on meetings for an extra hour and not mention paying me for it
This is on you, if you didn't ask in the interview process, especially as a contractor.
I know how you feel, I work for a company where I was supposed to overlook areas and process in the business and it’s different departments but at the moment what I actually do is data engineering, analyst and bi, business solutions architect end to end, basically I need to create ideas and solutions for improvements, document and develop it, understand the costs, the effect on employees, headcount, calculate ROI and break even, put meetings in agendas with all the head of each department involved on that and I earn half of the minimum average, according to jobseeker websites like indeed and InfoJobs of someone earns doing the same thing for other companies. Don’t give up, doing something different is always a good way to learn and develop news skills and mindset. See it as an opportunity even if doesn’t seem like one for the stress it can be generating at the moment. Try to use AI to help you with the things you are unsure and even explain some of the situations you are facing professionally in your day to day to come up with a solution. If nothing changes, try to look for another job while doing the duties you have in this job.
