They’re most likely not going to read the captions for the posts. It’s more about the main creative asset that was shared.
They’re also probably not going to look at the original that was shared. Recruiters and hiring managers are busy. So, they’re just looking for the highlight reel. Show your best. Leave out the rest. Including client approved captions.
A spot in my book has the super I preferred before my ECD and client workshopped a new one together. No one once has brought up broadcasted line.
It’s your book. Make it the best representation of you, your work, and your POV.
Don’t lie. share things you have written but didn’t get sold for whatever reason and be proud of it. Great lines die all the time because clients are scared. At your level it’s more about the writing than the selling.
Use the good stuff, no one is looking that closely and if for some insane reason they are, just say you liked the version before client changed it.

The only risk is if people sense it’s a line that the client would never buy, thus throwing your judgement into question. If it passes that sniff test, you should be ok.
I think you could put it in your book and share what you wished it to be but that has to be good/clever/worth reading.
I disagree with the people who say don’t lie, etc.
Put the better thing in your book but call it out.
“I wanted to say xxx but the client wouldn’t allow it.”
“I wanted to say XXX but my boss doesn’t speak Gen Z” (assuming you don’t work there still. Don’t say that if you work there).
Etc. etc. etc.
You’re hired for your POV, writing, and creativity. Show it off.
