I try not to get excited about possible opportunities until the offer is signed because I have been in this position more than once. The best thing we can do is pick ourselves up and keep applying to give ourselves more opportunities to find work.
This is totally normal. That's why you apply to as much as you can (that fits). Don't get your hopes up but rather focus on killing it in those interviews. Always know that you're likely not the only one being interviewed and it does NOT speak poorly of you if someone else is simply a better fit.
Also, 3 interviews?? That means you were STRONG competition! That's really awesome.
Lastly.... why are you not looking at pay rate and hours? Not knowing details, I feel like that's really not a good idea. Companies pay VERY differently for what may be effectively the same position. Same with hours and expectations.
Those should be right at the top of considerations you make, not something you should brush off at all.
Best of luck and remember - 3 interviews means you really impressed them. Don't forget that.
