JPMorgan Chase recently introduced a policy change to increase the notice period to 60 days. I'm a 602 and resigned recently and yet my LWD is showing up as 30 days from now. Anyone recently resigned can confirm if they are facing the same or new policy is in effect. This is causing confusion with the next companies I'm interviewing with.

It really depends on what your goals are. From reading your question, it doesn’t seem like your interest or passion will be in the Senior PM role. I’d suggest to just reassess your goals before jumping into either role.
I just want to try out PM and unlock that career path. I’m not loving PMM so much, so I don’t want to get pigeonholed (or so far along so that it’s a major step backwards to move into a PM role).
I would focus on what you want to gain out of the job. Go with the offer/path that prepares you the most for your next role.
I just did a similar thing except it was CS => PM. It’s really important to be passionate about the product you’re working with. I’d recommend the Series A company. Prove yourself for a year and then start talking to them about a shift to product
A legacy product can be a low-stress environment for learning the ropes of product management and experimenting. Also, knowing how to end-of-life a product is a valuable skill. It depends, are you looking for that kind of learning?
I agree and like the fact that I’d have plenty of other PMs to learn from in a relatively chill environment. Ultimately I just want to break into product management, so I’m interested in learning a range of PM skills. I guess long run I would like to work for a younger company doing cool things...so I’m not sure whether only having worked at an older company would hinder me.
