In Jamaica, I really like Couples San Souci. In Mexico, Unico and Valentin were both great. I also like the Breathless in riviera maya (will be there for Christmas this year). My recommendation is to figure out what you like (food, parties, activities, entertainment, etc.) and go to the brand that emphasizes that. For example, we really like food so we do not go to resorts where the buffet is open for dinner and the ala carte restaurants require reservations. IMO, that is a sign they will force you into the buffet. I could care less about the entertainment, so I ignore reviews that say the entertainment was lacking. Final thought, with very few exceptions, the more you pay, the better the resort.
Look into Secrets for a more relaxing vibe and Breathless for a mix of a relaxing/party vibe. They have properties in Mexico and Jamaica!
Breathless is awesome
We just left TRS in Cancun. It's adults only, and the staff is awesome. It's right on the coast, so you have beach access, and just outside of the city on Playa de Mujeres.
Couldn't recommend it enough.
The Sandals Resorts are also wonderful options.
Just leaving Beloved Playa Mujeres in Cancun. Fantastic time and beautiful resort. There are three Excellence resorts on the same beach. Beloved is couples only and a little more laid back, excellence Playa Mujeres is adults only but more of a party vibe / groups. The third (Finest) is more family focused.

I'd recommend the Four Seasons Resort Punta Vita in Mexico. It is a great place to stay even if you're traveling alone. The food is great also.
