Best time to ask for a raise. Sounds like, without you, everything falls apart.
You need your former bosses title and salary, at a minimum
Good idea, with risks. Be ready to walk away or be fired (which doesn’t sound like the worst thing)

With all his clients. I open my outlook at 7am and I have 200 emails. And the partners mark everything as urgent. I’m spread thin and I wanna crawl under the covers and hibernate.

I would be prepared for everyone on FB to ask what the manager did.

If you have good skills and a strong resume, most consulting firms are hiring. Hiring freezes are put out to stop general hiring, but we and many of our competitors are still hiring for specific skills/qualifications.
Tell them you have corona and will be out for 4 weeks.

If you tell the virus that you already had it, it’ll leave you alone. Lol
Escalate to your leadership in writing. This gives you opportunity to shine while covering your butt in case you get blamed for bad/slow client service. Use some sort of metrics to illustrate the situation. "Hi boss, I need your guidance on a situation. As you know, there have been a variety of departures lately. Those departures mean that a client load previously handled by X number of people has fallen on just me. Although I'm happy to step into my manager's role, the fact of the matter is I am just one man instead of X, so I'll need either more resources to share the client load, or help to dramatically reset client expectations or risk being unable to meet the needs of this many clients simultaneously. How do you think we should proceed to keep our clients happy?"

I’d also add whatever efficiencies you can bring in so that it’s not just you’re doing the job x number used to do.

This is an opportunity for you to advance. Most of my opportunities over my career have come right after a mass exodus. Step up and take your boss’ job. Start delegating. Build a team. Be a leader. If you can weather this you will be invaluable and have proven yourself.

Thank you Partner 1!
Ask if you can work on the assignments with a team of other people. What are the due dates? Can dates me moved? You can look at what needs to be done & make a priority list & send partners dates that you will be able to get the work done & that if those dates don’t work that maybe you all could work on assigning to other people in the office. If that doesn’t work take leave :(
