Need some clarifications about offer letter acceptance. What if you accept offer but at last did not join because you got another offer at last moment.? Do companies take any action on this ?

My last therapist keeps coming up in my mind. I left her when I moved to a new area before COVID dug in and frankly it felt like leaving a girlfriend.
