Hey OP! Also throwing a 200+ person wedding that is 90% close family that we want to be there - so I understand your position better than some and get the same comments sometimes…
I’m in MA, but getting married out of state. That being said, most of the venues that I’ve looked at that don’t require their own F&B are barns. Ballrooms or otherwise spaces attached to hotels will typically require their own kitchens be used. Also look into city owned/public spaces that are available for rent! They usually allow you to bring in your own catering.

It sounds like you might need to compromise on venue location to fit your budget. The fancier trendy wedding locales are going to be very expensive for a big wedding vs. the more typical wedding hall experience (which are just as fun! And nowadays, you can dress those up pretty easily).
Definitely, we’re certainly going for nice but both don’t want anything fancy or too elegant
Also to preface some comments: we know them all personally very well, I probably see over 120 of them just when going home for the holidays

I am running into this issue on the West Coast! Trying to plan something affordable for 200-250 people is really hard. Every option I like tends to come in at 50k++
