Are government jobs dead ends professionally? What can you grow or pivot to from an intro level government position?

I got an offer for Ops Manager position at Uber in a new country they are launching (which is my home country). I was told during recruitment call it's a heavy analytical role and they asked my phyton skills etc. Anyways during the interview i was told that the main expectation from this position is going out to streets to recruit new drivers everyday 🤯 is it really what an ops man do? Why would anyone do that job after working at management consulting for years?

Has anyone moved from a firm to do in house compliance? I applied to an in house counsel role but have been offered this instead. It seems to be JD preferred but is in my area of interest/experience.

I might have the opportunity to move from a plaintiff workers comp firm to a prestigious firm in a plaintiff and defense role for personal injury. The expected ratio is 40% plaintiff and 60% defense. Deloitte Compensation - I am expecting an offer coming from Deloitte for a Senior 3 position, transferring from EY. My question is; how much should I say I want to be paid? This market is crazy.
