Sounds perfect already. I love the National Parks of Southern Utah but always camp so cannot help with food recommendations.
The tour of Zion, Bryce, Capitol Reef, Grand Staircase, Monument Valley, then up to Moab and back around the north loop can be done in that time.
The drive from Capitol Reef to Monument Valley has some beautiful scenery and not many people.
Make sure you hike the narrows in Zion. You'll probably want to rent some canyoneering shoes, a walking stick, and a dry bag in Springdale, but it's not technical and probably the most unique hike in a US national park
Thank you both - great recommendations

If you happen to be with Deloitte then stay at the Grand American Hotel- corporate rate rivals the Hampton and it’s AMAZING
Some side trips from the typical southern Utah trip: Check out the petroglyphs in Nine Mile Canyon. Hike the Narrows in Springdale. Have to check out House in the Rock. Salt Flats are cool, and concerts at the Salt Air. Delta solar ruins will make you laugh. Would do a river trip somewhere, though you might have to go under Flaming Gorge if it’s been a bad water year Bingham copper mine is cool to see. Restaurants: Hells Backbone, Painted Pony. Ask me again when you go to Northern Utah and I’ll be more help! ;-)
Oh and grab a shake at Iceberg in St George
Zion: The Narrows and Angels Landing
Restaurant in Springdale next to Zion: The Bit and Spur
I’ll second that. Best hotel in SLC by far!
