Where do you bank and/or have cards now? What cards do you already have?
What airline do you usually fly? I assume American if you're based near CLT, but possibly not since you mention the drive.
Easiest recommendation would be Chase Sapphire Preferred, as the UR points (80k sign up bonus offer right now) give you the flexibility of choosing cash back, or transferring to some mile and hotel programs in case you find a good redemption.
Chase Sapphire Preferred or Sapphire Reserve gives you the option of redeeming for 1.25 or 1.5 cents, respectively, per point on travel booked on the Chase site.
In other words, you can use 60,000 Chase points for $750 (60,000/0.0125) or $900 (60,000/0.015) worth of travel, depending the cards.
Alternatively, you could transfer the 60,000 Chase points to an airline in exchange for miles (generally 60k points = 60k miles).
Notably, American is not a transfer partner (I.e., you cannot transfer Chase points to American). You can transfer to British Airways and book an American flight, but it gets a little more complicated.
You need to decide if the added benefits of the Sapphire Reserve exceed the additional annual cost.

Six hours of driving almost sounds like a missed connection itself. One option is to take the one stop and focus more on the plan to manage a delay or missed connection. For example you could take your stop in an airport with an attached hotel that offers a day use rate or minute suites so if you get stuck the family can chill in their own space or the infant can nap.
In terms of cards I'd also consider bank of America in your position. If you're willing to bring over assets to their platform they increase your rewards rate and this makes their travel card competitive and simple.
