Try using some of the search platforms for points bookings like seats.aero Are you flexible on dates? Flexibility is key on award travel.

Do you have United points or flexible credit card points as the outcomes are vastly different. United points can be used to book partner flights if & only if they’re found on the United site. You cannot transfer points from United to say Singapore Airlines or Air Canada Aeroplan (both star alliance).
I may have misread what’s written above but that’s my basis for understanding your question.
Ah didn’t not realize the difference or that you couldn’t transfer. I have united points and the options on there are minimal at the moment. I also have Amex credit card points that I assume could get transferred.

Ah yeah Amex points would give you that flexibility. In this situation I’d do a few things. Decide what’s more important: flying from Houston or landing in Nairobi & dates fixed vs flexible.
I’m guessing dates are fairly fixed and Nairobi would be the more important city. And if that’s the case, I’d look at booking a flight that starts somewhere else in the US all on the United site. You’d be surprised what airlines do when releasing inventory on routes directly from hubs vs from non hub cities that have a layover and fly you on the exact same plane from the hub city.
It’s a modest annoyance but pragmatically where we are. I’ve had luck positioning and highly recommend it if destination and days are fixed. A little work goes a long way

Nope you’d have to get to NY in that example. But you’d be surprised what being flexible on your departure airport does for availability
