6 months before your annual review you should be having the talk with your boss about moving on up, what they would need to see, etc. Get some firm targets for you to hit.
But once you get an offer from a competitor you take it. You shouldn’t tell your current company. If you’re “essential”, you might get a short term pay bump to keep you around. But they will mark you a flight risk and start looking for your replacement that same day.
You don’t use the interviews/offers themselves as leverage, but rather as a data point of what compensation you should be getting with taking on that added responsibility. Then you can go to your current employer with that knowledge and offer to take on the increased responsibility in exchange for the increased compensation.
