Two questions on IP:
A) If an employer agreement says they own any new IP developed by the employee, does that include employee contributions to existing Open-Source projects?
B) If any employee wants to get credit for what they can do from future employers, why wouldn't they structure all side projects as Open-Source contributions during their current employment?

These days though it doesn’t take much to get an MVP together and angel funding to get started. Everybody I know who ended up with their own product and company quit work for a few months to get this done. Usually they knew if it had no traction within 6 months and just hopped to another job. I don’t know or heard of anybody trying to bootstrap something while they are working full time. The IP clauses are too broad these days. Even if you are in the right, you will go bankrupt paying lawyers, and investors will wait until it’s settled.

In that case (no monetization), you could anyway put it on your resume (like you would do with other projects). Also, to be safe, use your own resources (laptop, open source frameworks, open source coding environments) while working/contributing to this project. Should be okay I guess.

Independent contribution, not under company name or time.

A lot of employers make it super broad to discourage trying to game it. Basically they own it all.
