Go to NC for pulled pork, Memphis for ribs, or Texas for brisket.
Go to the source, not imitators.
This is also why I don’t eat lobster out here, other than in lobster bisque. I moved out here from Maine, and when you’ve had it fresh off the boat, you don’t tolerate it any other way.
Prior to living in Maine, I lived in Memphis. I don’t mess with fake BBQ.

Definitely hard to find decent/reasonably priced BBQ in Seattle. Hole in the Wall BBQ is tasty but their hours & location are a challenge. Great option for lunch if you work downtown!
