Personally, I really love the dehydrated dog foods too. The Honest Kitchen is my favorite brand for my own dog, but there are quite a few out there.

There's no real advantage to wet food other than dogs think it tastes better. Cats have a low thirst drive so they need the moisture from wet food because they don't drink enough water on their own. Dogs drink water just fine.
Honestly, if your dog is doing well on his current food, why switch? You don't need to spend a ton of money on food to have a healthy dog. I usually add water or broth to my dogs regular food until it becomes a mush and use that with some peanut butter to stuff their kongs. I occasionally buy canned food to add a bit into the mixture.
Personally, I think high end dry is the better choice. Its better for their teeth to chew the dry kibble, and there's plenty of good stuff you can put in the kong to keep them entertained.
I think it depends on the dog, breed, and their digestion and preference.
I always start of with dry. It's just much easier to clean up and prepare
