I like doing broccolini with olive oil, lemon juice, salt and pepper. I usually bake it with feta, red onion, and cherry tomatoes with a little red pepper flake and honey mixed in. Throw it all in the oven for 30-45 minutes and serve over some sort of grain and it's a great, super easy meal.

I like roasting eggplant, which is partly because I garden and like to grow my own. I don't season it much, just brush it with olive oil and add a little Italian seasoning. I also grow my own oregano and basil, so if I have everything at the same time (not always assured) I'm set.

Do you sweat your eggplants before roasting?
Oh yes, Brussels are absolutely delicious once you roast them, such an underrated vegetable. I also love roasted cauliflower, just some salt, and white pepper before going in the oven, then toss it in some buffalo sauce when it comes out. Heavenly stuff.
yeah - brussels for me. EVOO, salt and pepper. that’s it.
Cauliflower - olive oil, salt, pepper and parmesan on top.
Carrots - either with honey, thyme and rosemary (plus salt and pepper) or Indian inspired with garam masala
