Other than tall ones like corn or pole beans, everything will do fine indoors if you have enough light and space.
Most vegetables need a *lot* of light. A big south-facing window can work, but modern buildings often have windows that reflect a lot of light to reduce cooling bills, and if you have those then there are not a lot of options.
Grow lights are one such option but the electricity bills can be substantial.
There's no harm in giving it a try, though! Worst case the plants don't thrive, and you have to toss them out. Best case you get some delicious homegrown veggies!
