I pull from what I've earned after I pay my quarterly estimated withholding. I was able to build up enough reserves so that I don't need to draw every month. Once you've been at it for a bit you'll be and to predict what that number should be month to month.
They the business is an s corp they have to have payroll, different rules than an LLC

You probably don’t need a payroll program to pay yourself. Just pull the money. Get with a CPA to help you make estimated quarterly tax payments.

I'd recommend having a payroll company like adp or paychex do it for you. Otherwise you can use quick books. That being said, if you aren't an scorp then you don't need payroll. If you are only an LLC, do not do payroll, just distribute money to yourself
