Depending on the need, I transfer to lifemiles, flying club, Ana, and flying blue.
A lot of programs have specific sweets pots no blanket transfer partner that's vastly superior. It all depends on your travel needs
I struggle with this too. Only good value seems to be intl flights.
Charles Schwab Amex is the best way to unload a bunch of points (1.25x straight to brokerage)
Best value by far is ANA for business class around the world. Avianca or Aeroplan can be good as well. Marriott and Delta are usually terrible. If your into domestic flights BA Avios to fly on american works if it’s a direct flight.
But what were you expecting when you got an amex? If you want cheap economy tickets citi/cap one for a Turkish to fly on United is your winner.

If you value flying in premium cabins you can get waaay more value than 7k on those points
I just transferred 110K Amex points to Avianca Lifemiles and booked a first class ticket to Cairo on Lufthansa Airlines. Ticket prices at $7,300+.
