It depends on the project and level of the students for me. Some classes need a lot more structure. Some don’t. I also have tiered assignments.
I get more student buy in and quality when they have choice. If they’re doing research, for example, I give them a range of choices. The same applies for essay topics.
It depends on the project you are giving to let the students decide do they want to do it in a group or individually.
Keep in mind what you're teaching. Are they demonstrating that they recall information? They could probably do that in multiple ways. But if the brief is to teach kids to write a compare/contrast essay, that's a skill they're probably not going to develop without writing a compare/contrast essay.
