For good desi food, visit Artesia. Good options out there. There was a good Indo Chinese cuisine. I think it was called Mas Chinese cuisine.

Mas is actually in OC - Anaheim and in the city of Orange.
Good Desi food in Artesia and Culver City, paradise and abhiruchi for good biryani, c&o for good Italian in marina del Rey, badmash la for non veg food as someone suggested, Washington fairfax has some good Ethiopian food (Messob is the most common one I go to) , some good Indonesian and surprisingly Nigerian places in and around culvert city, the lax airport has an in and out where you can see planes land and take off from the garden nearby, urth cafe is a decent place too with many cuisines and locations, quarters is a good place in ktown for KBBQ and if you want dal bati, samosa house in Culver City has decent thali on weekends.

If you are a fan of butter chicken Al-noor has the best one I have had anywhere.
They also have really good dal and parathas

In LA: go to DAMA and Bavel in DTLA.
Guelaguetza in Koreatown for some of the best Oaxacan Mexican cuisine - very different from tacos burritos etc and super delicious.
Little Tokyo - go walk around Japanese Village Plaza and look up the ramen and sushi places there. Sushi Enya in DTLA is also very good.
Union in Pasadena for the best pasta ever.
Gracias Madre in West Hollywood - incredible vegan food. I’m a pretty regular meat eater and I go to Gracias Madre pretty often because their food is amazing, nvm that it is fully vegan.
Taeem Grill - also in West Hollywood. Great Israeli shawarma, falafel, sabich.
Desi cuisine options:
Bundoo Khan in Fullerton - original franchised outlet from Karachi. Their chicken malai boti kababs and puri parathas are insane.
Zam Zam Market in Hawthorne/Inglewood: undisputedly the best chicken biryani in LA/SoCal.
Food here is ridiculously good.

Forgot to add - the Thai Town enclave in East Hollywood is one of its kind anywhere in the world outside of Thailand. Full regional variety of Thai cuisine at dozens of different restaurants. This is legit heaven if you like Thai food.

San Diego has good Mexican food but usually on street carts in Chula Vista. If you crave Indian food, Delhi Kitchen and Punjabi Tandoor are North Indian dhabas. Didn’t like anything else that great 🤷♂️

Badmaash in LA, especially if you are non-vegetarian. Also there is oldest in-operation McDonald’s in LA if you want to go there.

Sun Nong Dan in LA is the best Korean food I’ve ever had, but keep in mind it’s pretty meat heavy and their best menu item is beef (non beef meats were also very good)

After reading all these comments, I stick to my recommendations to answer your “must try “ criteria. If you can fly to anywhere in the US, San Diego and even Artesia are not great desi food hubs.

That I will give it to you M2, Artesia has a wider selection of Indian cuisine.
