Quick pickle things frequently. I riff off of a basic Vietnamese Đồ Chua recipe, using whatever veg I want, not only carrot & radish. Works well with peppers, celery, cucumber, beets, any crudité-type veg. Fantastic as an accompaniment to smoked pulled pork!

I have pickled turnips with simple vinegar and sugar, and mini cucumbers (the ones served at Din Tai Fung).
Oh my god I love the mini cucumbers at din tai fung. I could eat it all day as a meal itself
After my husband's heart attack, we had to find ways to keep the things he loved eating. These pickles are the best! But, the really great thing is that you can pickle any vegetables in it. I've used it to make pickles, beets, peppers, and eggs. It's so good!
