It is at will as A1 stated in most states, and especially for layoffs you certainly can be let go with no prior notice. In practice, if you are being fired for cause / low performance, chances are you will have some indication of that in advance, but in some cases it may just be “here’s your below average YE rating” followed by being fired a few weeks or months later.
If you can prove discrimination or some other offense then you might have a case, but really it’s almost never a good idea to sue a former employer as it probably brands you as a problem for future employers (of course there are exceptions for egregious things).
At Deloitte it would be much more common to put someone on a PIP (performance improvement plan) first, but I’ve seen people with low performance ratings let go without a PIP especially in bad years where they are reducing headcount, and if you do something REALLY bad they will immediately show you the door.
Yes, considering fire means you had to have done something on the fireable offense list. I think you meant let go/laid off

Good luck, not sure how things go at EY, but maybe it’s like a Deloitte PIP where you are given an action plan to address any issues? I’ve certainly had counselees work their way out of those and are still with D years later.

A good approach is to have a "crystal clear expectations" discussion before firing. HR is included in that meeting.
And of course if you've done anything to harm the firm's reputation to a client. That is a major redline to not cross.
