I used serious eats barbacoa as a base recipe. Wife is a big fan, I think it’s solid but my favorite Mexican places still do it better, still open to trying different ways to make it.

Serious eats recipe uses oxtail just to flavor it, you actually toss the oxtail meat out after.
It’s a good recipe but oxtails at Costco come in packs much larger then needed, does feel wasteful to use $10 in oxtail to discard, then have $10 in oxtail left to use quickly in another recipe when you already have 5lbs of barbacoa to go through...
